What is a flexitarian? It’s one of of those terms we apply apparently at random – depending on our own personal approach to diet. When I mentioned to some friends that I was planning to start collecting and publishing my favourite flexitarian recipes, each and every one of them claimed to follow a flexitarian diet. But, what did they mean?
There is no doubt in my mind that we are in the middle of an environmental crisis and that we should be looking to address that with as many personal reforms that we can by reducing our carbon footprint. Whether that is by eating less meat, giving up a car, avoiding unnecessary air travel or any one of the eco-friendly solutions proposed, I’d suggest is personal choice. Following a flexitarian diet is just one step.
My own definition of a flexitarian diet is of an environmentally conscious approach to eating. Less meat (particularly beef and lamb) and more local, seasonal foods. Minimizing food waste. Making use of techniques like batch cooking and pressure cooking to reduce energy costs. It’s not vegetarian or vegan for me, but it could be for someone else. It’s about reducing the food miles of what I consume. No more strawberries at Christmas – genuine awareness of where the produce I buy comes from.
