Mushroom and Iberico Ham Tarts

An easy rustic style supper dish or delicious canapes.  Simple Mushroom and Iberico Ham tarts

Ingredients

  • 500 grams Mushrooms Use a mixture of mushrooms of your choice. I used button mushrooms, chestnut mushrooms and large field mushrooms
  • 1/2 pack All Butter Puff Pastry
  • 20 grams Butter
  • 50 grams Iberico Ham
  • 50 grams Wild Rocket
  • 1 teaspoon Ground cumin (optional)
  • 1 medium Red Onion
  • Salt and freshly ground black pepper

Instructions

  • Take the pastry and the ham out of the fridge so they can reach room temperature.  Turn the oven to 175C
  • Clean, trim and slice the mushrooms. Peel the onion and dice very finely
  • Melt the butter in a large frying pan and saute the onion till soft and translucent.  Remove from the pan. 
  • Saute the mushroom gently in batches if necessary, seasoning with pepper and cumin and a small amount of salt.  They should be soft and barely cooked through.
  • Mix the onion and mushrooms together and put to one side.  This can be done in advance if necessary
  • Take the pastry and lay out on a lightly floured board
  • Roll out into an oblong.  If you are making a single tart, all you need to do now is roll up the edges and brush them lightly with beaten egg.  
  • To make canape style puffs, roll the pastry out to around 1/4 cm thickness.  Using a cookie cutter, cut bite sides rounds.  With a cutter just a little smaller, mark a central 'round'.  Brush the outer edge with egg mixture
  • Put the tart/tarts onto a silicone lined baking tray
  • Pile the mushroom mixture into the centre of the tart.  If you are making canapes, you will just need a small teaspoon of mix for each canape.  For the large tart, pile the mushroom mixture into the centre, then spread out towards the edge of your pastry oblong
  • Bake for 10-15 minutes until the pastry has risen and is golden brown
  • Meanwhile, tear or cut the ham into bite sized pieces and wash and drain the rocket if necessary
  • While the tarts are still piping hot, top each canape with a morsel of ham and a few rocket leaves.  If you are making one rustic tart, scatter the ham and rocket across the tart.  
  • Serve warm
  • You can make and bake the canapes or tart in advance and just warm through in the oven when your guests arrive.  Do not add the ham and rocket in advance as you will not be able to re-heat.
