I’m Fiona, a Londoner for most of my adult life but a country child at heart – I was brought up in rural Norfolk, on the coast in a small town called Hunstanton.
I already run a successful London lifestyle magazine, but it only really shows one side of my life. At home, I love to cook and I enjoy a flexitarian diet, with plenty of fresh vegetables, homemade soups, stews and casseroles.
Like many people, I’m moving towards a more sustainable way of life. I try to grow my own herbs and some of my own vegetables. I buy my food from the local Farmers’ Market and, more and more, I use vegetables as the basis for my diet, with meat to enhance rather than the main focus of the dish.
The Frugal Flexitarian is about a journey from a classic ‘meat and two veg’ diet to meals based on plants. I’m experimenting with replacing some or all of the meat in classic dishes I’ve enjoyed all my life – shepherd’s pie, burgers, bolognese sauce and curries. I’m trying new ingredients – beans, pulses and lentils in all shapes and sizes for starters. And, where I am using meat, fish and dairy products I am trying to be mindful of the origin of the food and the environmental impact. I’m also mindful that even a vegan diet can damage the environment, so, for the most part, I am trying to work with local, seasonal ingredients.
