Fed up with mash, roast and boiled potatoes or hooked on frozen oven chips? The humble spud is oh-so versatile and there are plenty of options for cooking potatoes from scratch. Here’s a selection of seven potato recipes. There’s a mix of sides and main dishes, there are posh options and dishes you might rustle up for a lazy TV dinner. We hope you enjoy them! Boulangère Potatoes

The ‘slightly’ healthier and frugal cousin of Dauphinoise potatoes, these thinly sliced potatoes are layered with potatoes, onions, herbs and stock. There’s no cream and no cheese so you could easily make a dairy-free version of this potato recipe, though we have to confess that we like Boulangère Potatoes with generous dabs of butter on the top to help make a deliciously crispy topping – Tempted? Potatoes, courgettes and lemon in olive oil

This is a rather unusual and delicious way to use up a glut of courgettes in a side dish that has all the fragrance of a Mediterranean summer. You can serve it hot or at room temperature as part of a salad selection. All you need is some new potatoes, good olive oil and a lemon or two, along with fresh herbs to add depth. Potato and Bacon Hotpot

This is one of those recipes that everyone should learn. It’s a filling and satisfying meal in one pot and really not expensive to make. Our recipe includes leeks, but you should be able to easily put your own twist on the dish. You’ll need to use a hard cheese, but it works well with everything from Jarlsberg to Cheddar – and you can even use scraps of leftover cheese. This is a super simple and quick potato recipe that you can cook in the oven or air fryer if you prefer. These little cubes of crunchy potatoes are laced with herbs and garlic to make a delicious side dish that is deceptively easy to put together but will impress your friends and family. Everyone needs a good recipe for potato salad. This version is really easy and because it’s made using new potatoes, you don’t even have to peel your spuds. Truffled Parmesan Chips from Scratch

Forget about frozen chips – making your own oven chips from scratch is really easy and means you don’t use up valuable freezer space. It’s cheaper and healthier – you can control exactly what ingredients you use. Make them in a conventional oven or an air fryer. Cheesy Jacket Potatoes

This is a great recipe to make in an air fryer. But don’t worry if you haven’t got one, these cheesy jacket potatoes work just as well in the oven. Use a microwave to part cook your potato before scooping out the flesh and mashing it up with a cheese and egg mixture. Top with more of that cheesy mix and put the halves into the oven or air fryer for ten minutes or so and you’ll have the perfect quick lunch. Find out how to make cheesy jacket potatoes here
